What DO you eat?!

One of the questions I am asked most often is “What DO you eat?”  People often think that if I am not eating carbs or sugars that there is nothing left to eat. There are truly lots of good, healthy, low carb choices.

When I first started this plan, I used the Yeast fungal eating plan which said to eat as many of these foods as possible:

EGGS  – Only from grass fed chickens with no pesticides or hormones.

FRUIT, berries, grapefruit, lemon, lime, green apples, avocado, fresh coconut

MEATS, fish, poultry and beef

VEGETABLES, Most fresh, unblemished vegetables and freshly made vegetable juice (no starchy ones)

BEVERAGES, bottled or filtered water, non-fruity herbal teas, stevia sweetened fresh lemonade or limeade, freshly squeezed carrot juice

VINEGAR, apple cider vinegar

OILS, olive, grape, flax seed, cold pressed virgin coconut oil

NUTS, raw nuts, including pecans, almonds, walnuts, cashews, and pumpkin seeds. Stored nuts tend to gather mold, so be careful!

SWEETENERS, Stevia, Stevia Plus, birch tree extracted Xylitol

DAIRY, Organic Butter, Organic Yogurt, (use the following very sparingly) cream cheese, unsweetened whipping cream, real sour cream.

When I had gone 4 months on the plan above, I began to add a few other dairy, fruit and vegetable choices and an occasional grain, ie, at Thanksgiving I made whole grain cornbread dressing.  What I have discovered is that grains and high carb foods make me lethargic and tired.  They also make me have food cravings, so I have now made grains to be VERY rare in my eating plan.

My typical day’s food looks like this:

On rising, Salt Tea, followed by a cup of tea like Yerba Mate or Slique Tea and then, Ningxia Red.

Breakfast – Eggs or Almond Pecan Waffles topped with fruit, Hot cocoa

Lunch – Meat, salad and a vegetable  or Salad with avocado and cheese

Mid afternoon – Salt Tea, Slique Tea or herbal tea

Supper – Varies from same as lunch to apples and cheese or apples and almond butter.  If I eat a big lunch, I generally eat a light supper.

One key to feeling satisfied without carbs is putting lots of REAL Butter on the veggies.  I prefer organic, non-salted.

Another key is to drink plenty of water.  To give variety, I put SweetLeaf flavored Stevias in my water.   Stevia balances blood sugar and helps curb cravings while having a ZERO Glycemic Index. I try to drink 2 quarts of water per day. 

For snacks and treats, I try to stay low carb and of course, use stevia and xylitol as sweeteners.  I look forward to trying yacon syrup soon as it is zero glycemic level.

When on the go, I keep nuts, apples and water with me.  If I am going to an event where there will be cakes, cookies or other temptations, I take something homemade so that I don’t feel deprived or like a martyr.

These are the typical veggies and fruits I eat:  Broccoli, Asparagus, Cucumbers, Tomatoes, Green Beans, Turnip Greens, Spinach, Cauliflower, Avocado, Carrots, Cabbage, Bell Peppers, Red, Green, Yellow and Orange, Celery, Red Cabbage, Turnips, Yellow Squash, Zucchini, Brussels Sprouts, occasionally, Spaghetti Squash, Apples, Oranges, Grapefruits, Red grapes, Cherries, Peaches, Pineapple, Blackberries, Blueberries, Melons. The rest of the family eats Strawberries, too, but I am allergic to them.  I eat these fresh when possible and buy frozen when fresh is not available.  I do not use canned fruits of veggies except canned tomatoes and applesauce, for cooking.

I regularly make homemade ice cream to keep in our freezer, so we have a good alternative to the store bought stuff we used to keep.

Occasionally, I make cookies with coconut flour, xyltiol and/or stevia.  I make banana bread with almond flour.

The key to success is to PLAN AHEAD and have food ready to go.  When I first started eating this way, I felt I couldn’t go anywhere to eat, but now I know I can still eat with friends.  I simply plan ahead and bring my own food.  I feel really good about that, as I know that the quality of my food and snacks is excellent and I do not yearn for lesser foods, and have not wanted lesser foods, since I finished going through withdrawal.

I AM legalistic about what I eat because I feel so much better and want to keep feeling good!  I sometimes miss the convenience of junk food, but I NEVER miss the pain and suffering I used to endure!

      I have actually done the diet at Hallelujah Acres in the past. I did NOT get well on it. I DO believe it has its place and I assisted my dad to get on that diet when he had cancer.

      He overcame cancer on the Hallelujah Acres diet. I am the one that bought all the books so he could know what and how to eat, and I did it for a season, too.

      I think someone with cancer needs to go that way, but for the long term, God made our bodies to need the protein and good fats.

      I feel fantastic and some of the things from hacres, I kept, like carrot juice and eating lots of salads and raw foods.
